BLT Pasta Salad
Ingredients:
- 16 oz (450g) rotini noodles
- 20 strips of bacon
- 2 pints (about 4 cups) cherry tomatoes
- 10-12 oz (about 300-350g) romaine hearts, chopped
- 2 cups (about 200g) cheddar cheese, cubed
- 1.5 cups (360ml) mayonnaise
- 1/2 cup (120ml) sour cream
- 1 packet ranch dressing mix
Instructions:
- Cook the Rotini Noodles: Bring a large pot of salted water to a boil. Add the rotini noodles and cook according to package instructions until al dente. Drain the noodles and rinse them under cold water to stop the cooking process. Set aside to cool completely.
- Prepare the Bacon: In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes per side. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease. Once cooled, chop the bacon into bite-sized pieces.
- Prepare the Cherry Tomatoes: Rinse the cherry tomatoes and cut them in half. Set aside.
- Prepare the Dressing: In a small bowl, mix together the mayonnaise, sour cream, and ranch dressing mix until well combined. Adjust seasoning to taste if necessary. Set aside.
- Assemble the Salad: In a large mixing bowl, combine the cooked and cooled rotini noodles, chopped romaine hearts, halved cherry tomatoes, cubed cheddar cheese, and chopped bacon.
- Add the Dressing: Pour the prepared dressing over the salad ingredients. Gently toss until everything is evenly coated in the dressing.
- Chill and Serve: Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
