Cajun Chicken Alfredo Pasta

Quick meal for under $20
Fed 2 adults and a teen. I didn’t get a pic until after fixing plates so this made a lot.
The pasta was on sale 4 for $5.
I used 2 boxes,
The chicken was $12 + some change.
baked and hammered by my bf (he said his hands were tired 😂)
Seasoned with salt, pepper, garlic and onion powder, chicken seasoning & Cajun seasoning. Baked for 20 min at 425 degrees.

Cajun Chicken Alfredo Pasta

Ingredients:

  • 2 boxes of pasta (penne, fettuccine, or your choice) – $2.50
  • 2 lbs boneless, skinless chicken breasts – $12
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Onion powder, to taste
  • Chicken seasoning, to taste
  • Cajun seasoning, to taste
  • 2 tablespoons olive oil
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Total Cost: $14.50

Instructions:

  1. Preheat the Oven:
    • Preheat the oven to 425 degrees Fahrenheit.
  2. Prepare the Chicken:
    • Lay the chicken breasts on a baking sheet.
    • Season both sides with salt, pepper, garlic powder, onion powder, chicken seasoning, and Cajun seasoning.
    • Bake the chicken for 20 minutes or until it reaches an internal temperature of 165 degrees Fahrenheit.
    • Once cooked, let it rest for a few minutes, then use a meat mallet or the back of a heavy pan to flatten and tenderize the chicken. Slice into thin strips.
  3. Cook the Pasta:
    • Cook the pasta according to the package instructions until al dente.
    • Drain the pasta and set aside.
  4. Prepare the Sauce:
    • In a large pan, heat 2 tablespoons of olive oil over medium heat.
    • Add the sliced chicken to the pan and sauté until golden brown.
    • Pour in the heavy cream and bring it to a simmer.
    • Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
    • Season the sauce with additional salt, pepper, and Cajun seasoning to taste.
  5. Combine Pasta and Sauce:
    • Add the cooked pasta to the pan with the Cajun Alfredo sauce.
    • Toss everything together until the pasta is well coated with the sauce.
  6. Serve:
    • Plate the Cajun Chicken Alfredo Pasta.
    • Garnish with fresh chopped parsley.
