Ingredients:

  • 1 1/2 cups pancake mix (just add water mix recommended)
  • 3/4 cups water
  • 2 teaspoons vanilla extract
  • 2 tablespoons granulated sugar
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions:

  1. Preheat the Oil:
    • Fill a pan with vegetable oil, about 2 inches deep, and preheat it to 375°F (190°C).
  2. Prepare the Batter:
    • In a mixing bowl, whisk together pancake mix, water, vanilla extract, and sugar until well combined. The batter will be thick.
  3. Frying the Bites:
    • Once the oil is preheated, use a tablespoon to drop portions of the batter into the hot oil. Be cautious not to overcrowd the pan to ensure even cooking.
  4. Fry Until Golden Brown:
    • Fry the bites for a couple of minutes on each side or until they turn golden brown. Use a slotted spoon to flip them for even cooking.
  5. Drain Excess Oil:
    • Remove the fried bites from the oil and place them on a plate lined with paper towels. This will help absorb any excess oil.
  6. Powdered Sugar Coating:
    • While the bites are still warm, generously sprinkle powdered sugar over them. Toss the bites gently to coat them evenly.
  7. Serve and Enjoy:
    • Arrange the funnel cake bites or donut holes on a serving plate. They are best enjoyed warm. You can serve them with a side of chocolate or caramel sauce for dipping if desired.

Notes:

  • Customization: Feel free to get creative with toppings. You can add cinnamon to the powdered sugar, drizzle with chocolate or caramel sauce, or even dip them in a glaze for added flavor.
  • Dipping Sauces: Serve with a variety of dipping sauces like chocolate ganache, strawberry sauce, or maple syrup for extra indulgence.
  • Storage: These bites are best enjoyed fresh but can be stored in an airtight container at room temperature for a day. Reheat them in the oven for a few minutes to regain crispiness if needed.
