Budget-Friendly Egg Bite Muffins

  • 6 large eggs
  • Splash of milk (about 2 tablespoons)
  • Seasonings to taste (e.g., garlic powder, “Slap Ya Mama” seasoning, salt)
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup cooked and chopped sausages (e.g., better cheddar sausages)
  • Optional: Additional mix-ins like spinach, mushrooms, or ground sausage
  • Cooking spray or melted butter for greasing the muffin pan
  • Salsa for serving

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Meanwhile, grease a 12-cup muffin pan with cooking spray or melted butter.
  2. Prepare Egg Mixture: Crack the eggs into a bowl, add a splash of milk, and season with garlic powder, “Slap Ya Mama” seasoning, and salt. Whisk the mixture until well combined.
  3. Customize with Mix-Ins: Stir in shredded cheese and your choice of cooked and chopped sausages. Feel free to add any additional mix-ins like spinach, mushrooms, or ground sausage for extra flavor.
  4. Fill Muffin Cups: Pour the egg mixture evenly into the greased muffin cups, filling each one about three-quarters full.
  5. Bake: Bake in the preheated oven for 20-25 minutes or until the egg bites are set and the tops are golden brown.
  6. Cool and Serve: Allow the egg bites to cool for a few minutes in the muffin pan before using a knife to loosen the edges and pop them out. Serve them warm.
  7. Optional Serving Suggestion: Enjoy your egg bites on their own or with a dollop of salsa for added flavor. These also make a great portable breakfast or snack!
