Homemade Brown Sugar Glazed Meatloaf Cupcakes

1 Tbsp olive oil
1small onion, diced into sm pieces
1 1/2 pounds ground beef
3/4 cup plus 3 Tbsp Italian seasoned breadcrumbs
1 large egg
1/4 cup plus 2 Tbsp brown sugar
1/3 cup or 1/2 cup ketchup plus 5 Tbsp
brown sugar to make the topping glaze
1 teaspoon kosher salt, plus more for sprinkling
1 teaspoon freshly ground black pepper, plus more for sprinkling

Preheat the oven to 350 degrees
Spray your cupcake pan with non stick cooking spray.
Heat 1 Tbsp oil in a small skillet over medium-low heat until hot but not smoking. Add the chopped onion and saute until softened and translucent, about 6 minutes and set aside.
In a large mixing bowl, combine the ground beef with the breadcrumbs, egg, 1/4 cup of ketchup, 2 Tbsp brown sugar and the cooked onion mixture. Mix until fully combined. Take a icecream scoop and scoop the meatloaf into the cupcake tin.. Put the 1/3 cup or 1/2 cup of ketchup and 5 Tbsp of brown sugar in a medium bowl and mix together. Pour sauce on the top of each cupcakes.
Bake until meatloaf cupcakes are cooked through, 30 minutes or until done.
Serve with your favorite sides.
