My favorite Squash Casserole
3 cups sliced squash
1 can cream of mushroom soup
2 teaspoons grated onion
1 cup grated cheese
Salt and pepper
1/3 cup melted butter
1/2 cup bread crumbs
(I crushed Ritz crackers)
2 eggs beaten
For topping mix:
1/4 cup bread crumbs
(I use Ritz crackers)
1-2 teaspoons butter
Cook squash in a small amount of water until tender. Mash. Add all ingredients except topping. Mix well & pour in to greased baking dish. Sprinkle with topping mix. Bake 425 20-25 minutes.
(Make sure and temper eggs before adding!)
