Slow Cooker Turkey Breast Roast with Onion Gravy and Smashed Potatoes
Ingredients:
- 1 Turkey breast roast (with netting)
- 1/2 onion, sliced
- 1 packet of gravy mix (included with the roast)
- Potatoes (as desired)
- Salt and pepper to taste
Instructions:
- Prepare the Slow Cooker: Place the turkey breast roast in the slow cooker, leaving the netting on to hold the roast together while cooking.
- Add Flavors: Scatter the sliced onion over the roast. Open the gravy packet and pour it over the roast.
- Cooking: No need to add any additional liquid. Cook the roast on high for 6 hours or on low for 8 hours. The roast will release its own juices during cooking.
- Check for Doneness: Ensure the internal temperature of the roast reaches 165°F (75°C) or above before removing it from the slow cooker.
- Resting: Once done, carefully remove the roast from the slow cooker and let it rest on a cutting board while you prepare the potatoes and gravy.
- Potatoes: While the roast is resting, cook the potatoes separately. You can boil or steam them until they are soft enough to mash.
- Smash Potatoes: Transfer the cooked potatoes to a pan and smash them with a potato masher or fork until desired consistency. Season with salt and pepper to taste.
- Gravy: While smashing the potatoes, prepare the gravy using the juices and drippings from the slow cooker. You can thicken it if needed with a slurry of cornstarch and water.
- Serve: Slice the turkey breast roast and serve it with the smashed potatoes and onion gravy.
