Flour Tortilla Quesadillas


Homemade Flour Tortilla Quesadillas


  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 4 tablespoons melted butter
  • 3/4 cup warm water
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup diced cooked chicken (optional)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon chili powder (optional)
  • Salsa, guacamole, and sour cream for serving


  1. Prepare the Tortillas:
    • In a large mixing bowl, combine the flour, salt, and baking powder. Mix well.
    • Add the melted butter (make sure it’s cooled down) to the dry ingredients and start mixing with your hands.
    • Gradually add the warm water while kneading the dough until it comes together into a smooth, elastic ball. This should take about 5 minutes.
    • Divide the dough into 8 equal-sized balls. Roll each ball out into a thin round tortilla, using a little extra flour to prevent sticking.
  2. Cook the Tortillas:
    • Heat a skillet over medium heat.
    • Place one tortilla in the skillet and cook for about 1 minute on each side until bubbles form and it’s lightly browned. Repeat with the remaining tortillas.
    • Keep the cooked tortillas warm by covering them with a clean kitchen towel or placing them in a tortilla warmer.
  3. Assemble the Quesadillas:
    • Take one tortilla and sprinkle a portion of shredded cheese evenly over one half of the tortilla.
    • Add diced chicken (if using), bell peppers, onions, cilantro, and a sprinkle of chili powder if desired.
    • Fold the tortilla in half over the filling, creating a half-moon shape.
  4. Cook the Quesadillas:
    • Return the skillet to medium heat and add the folded quesadilla.
    • Cook for 2-3 minutes on each side until the tortilla is crispy and the cheese is melted.
    • Repeat with the remaining tortillas and filling ingredients.
  5. Serve:
    • Once cooked, slice the quesadillas into wedges and serve hot with salsa, guacamole, and sour cream on the side for dipping.
