Tomato Garden Delight Sandwich

Ingredients:

  • 4 large, ripe tomatoes (preferably homegrown)
  • 8 slices of your favorite bread (whole grain, sourdough, or ciabatta)
  • 1 cup fresh basil leaves
  • 1/2 cup balsamic glaze
  • 1/2 cup extra virgin olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 cup fresh mozzarella, sliced
  • 1/4 cup balsamic reduction (optional, for drizzling)
  • Optional additions: avocado slices, arugula, or red onion for extra flavor

Instructions:

  1. Prepare the Tomatoes:
    • Wash and slice the tomatoes into 1/4-inch thick rounds. Sprinkle them with a pinch of salt and let them sit for a few minutes to enhance the flavor.
  2. Basil Pesto Spread:
    • In a blender or food processor, combine fresh basil leaves, minced garlic, and extra virgin olive oil. Blend until smooth. Add salt and pepper to taste.
  3. Toast the Bread:
    • Toast the bread slices to your liking. You can use a toaster, oven, or a hot skillet with a touch of olive oil for added flavor.
  4. Assemble the Sandwiches:
    • Spread a generous layer of the basil pesto on each slice of toasted bread.
    • On half of the slices, layer tomato rounds, fresh mozzarella slices, and any additional toppings you desire (avocado, arugula, red onion).
  5. Drizzle with Balsamic Glaze:
    • Drizzle balsamic glaze over the tomato and mozzarella layers. This adds a sweet and tangy kick to the sandwich.
  6. Top and Serve:
    • Place the remaining slices of bread with basil pesto face down on top of the tomato-mozzarella layers to create sandwiches.
    • Optionally, drizzle a bit of balsamic reduction on top for an extra burst of flavor.
  7. Enjoy:
    • Slice the sandwiches in half and serve immediately. These Tomato Garden Delight Sandwiches are perfect for a light lunch or as a refreshing snack.
