Simple Chicken Avocado Salad


  • 2 boneless, skinless chicken breasts
  • Sea salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 2 large avocados, diced
  • 1 cup corn kernels, thawed if frozen
  • 12 oz grape tomatoes, halved
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime


  1. Season the chicken breasts with sea salt and black pepper on both sides.
  2. In a skillet over medium heat, add olive oil. Once the oil is hot, add the chicken breasts. Cook for 6-7 minutes on each side or until cooked through and no longer pink in the middle. Remove from heat and let it rest for a few minutes.
  3. While the chicken is cooking, prepare the salad ingredients. Dice the red onion, avocados, and chop the cilantro. If using frozen corn, microwave it according to the package instructions to thaw it.
  4. In a large bowl, combine the diced red onion, avocados, corn kernels, halved grape tomatoes, and chopped cilantro.
  5. Squeeze fresh lime juice over the salad ingredients.
  6. Once the chicken has rested, cut it into bite-sized pieces.
  7. Add the diced chicken to the bowl of salad ingredients.
  8. Gently toss everything together until well combined.
  9. Serve immediately and enjoy your simple and healthy chicken avocado salad!
