Quick meal for under $20
Fed 2 adults and a teen. I didn’t get a pic until after fixing plates so this made a lot.
The pasta was on sale 4 for $5.
I used 2 boxes,
The chicken was $12 + some change.
baked and hammered by my bf (he said his hands were tired )
Seasoned with salt, pepper, garlic and onion powder, chicken seasoning & Cajun seasoning. Baked for 20 min at 425 degrees.
Cajun Chicken Alfredo Pasta
Ingredients:
- 2 boxes of pasta (penne, fettuccine, or your choice) – $2.50
- 2 lbs boneless, skinless chicken breasts – $12
- Salt, to taste
- Pepper, to taste
- Garlic powder, to taste
- Onion powder, to taste
- Chicken seasoning, to taste
- Cajun seasoning, to taste
- 2 tablespoons olive oil
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- Fresh parsley, chopped (for garnish)
Total Cost: $14.50
Instructions:
- Preheat the Oven:
- Preheat the oven to 425 degrees Fahrenheit.
- Prepare the Chicken:
- Lay the chicken breasts on a baking sheet.
- Season both sides with salt, pepper, garlic powder, onion powder, chicken seasoning, and Cajun seasoning.
- Bake the chicken for 20 minutes or until it reaches an internal temperature of 165 degrees Fahrenheit.
- Once cooked, let it rest for a few minutes, then use a meat mallet or the back of a heavy pan to flatten and tenderize the chicken. Slice into thin strips.
- Cook the Pasta:
- Cook the pasta according to the package instructions until al dente.
- Drain the pasta and set aside.
- Prepare the Sauce:
- In a large pan, heat 2 tablespoons of olive oil over medium heat.
- Add the sliced chicken to the pan and sauté until golden brown.
- Pour in the heavy cream and bring it to a simmer.
- Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
- Season the sauce with additional salt, pepper, and Cajun seasoning to taste.
- Combine Pasta and Sauce:
- Add the cooked pasta to the pan with the Cajun Alfredo sauce.
- Toss everything together until the pasta is well coated with the sauce.
- Serve:
- Plate the Cajun Chicken Alfredo Pasta.
- Garnish with fresh chopped parsley.
