Cheddar Bliss Summer Pasta Salad

Ok not a “meal” but I devour this.
Chopped cheddar cheese, olives, cucumber, celery, tomatoes, & a little of both of these dressings!
Can also add pepperoni, onions, noodles, hard carrots, sausage crumbles!
If you add noodles make sure you run COLD water over noodles before adding the mix. Otherwise it melts the cheese & its not as good.
Then I think most call it summer spaghetti pasta. It is def cheaper during the late summer due to better growing season. Especially buying vegetables from a farm stand.

Cheddar Bliss Summer Pasta Salad.”

Ingredients:

  • 1 cup chopped cheddar cheese
  • 1 cup sliced olives (green or black, based on preference)
  • 1 cup diced cucumber
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • Optional: 1/2 cup pepperoni slices
  • Optional: 1/2 cup diced onions
  • Optional: 1/2 cup cooked and cooled noodles (rinse under cold water before adding)
  • Optional: 1/2 cup julienned hard carrots
  • Optional: 1/2 cup sausage crumbles

Dressings:

  • 1/4 cup Italian dressing
  • 1/4 cup ranch dressing

Instructions:

  1. Prepare Ingredients:
    • Chop, slice, and dice all the vegetables and other ingredients according to your preferences.
  2. Cook Noodles (if using):
    • Boil the noodles according to the package instructions.
    • Once cooked, immediately rinse them under cold water to cool and prevent them from melting the cheese.
  3. Mix Ingredients:
    • In a large mixing bowl, combine the cheddar cheese, olives, cucumber, celery, cherry tomatoes, pepperoni (if using), onions (if using), noodles, hard carrots (if using), and sausage crumbles (if using).
  4. Dress the Salad:
    • In a small bowl, mix the Italian dressing and ranch dressing together until well combined.
    • Pour the dressing over the salad ingredients.
  5. Toss and Chill:
    • Gently toss the salad until all ingredients are evenly coated with the dressing.
    • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve:
    • Once chilled, give the salad a final toss.
    • Serve in a large bowl or as individual portions.
