Spicy Rotel and Sausage Cheese Dip
Ingredients:
- 1 can (10 oz) mild Rotel tomatoes and green chilies
- 1 can (10 oz) hot Rotel tomatoes and green chilies
- 1 small block (about 16 oz) Velveeta cheese, cubed
- 1 lb ground sausage
- Optional: Tortilla chips or crackers for serving
Instructions:
- Preheat your oven to 350°F (175°C).
- Cube the Velveeta cheese and place it in a baking dish. Open both cans of Rotel and pour them over the cubed cheese in the dish.
- Place the baking dish in the preheated oven and bake for about 10 minutes or until the cheese is melted and bubbly. Stir occasionally to ensure even melting.
- While the cheese and Rotel are in the oven, cook the ground sausage in a skillet over medium heat. Break it apart with a spatula and cook until it is browned and fully cooked. Drain any excess grease.
- Once the cheese is fully melted and bubbly, remove the baking dish from the oven.
- Add the cooked ground sausage to the melted cheese and Rotel mixture in the baking dish. Stir well to combine, ensuring that the sausage is evenly distributed.
- Serve the dip hot with tortilla chips or crackers for dipping.
