Spicy Rotel and Sausage Cheese Dip


  • 1 can (10 oz) mild Rotel tomatoes and green chilies
  • 1 can (10 oz) hot Rotel tomatoes and green chilies
  • 1 small block (about 16 oz) Velveeta cheese, cubed
  • 1 lb ground sausage
  • Optional: Tortilla chips or crackers for serving


  1. Preheat your oven to 350°F (175°C).
  2. Cube the Velveeta cheese and place it in a baking dish. Open both cans of Rotel and pour them over the cubed cheese in the dish.
  3. Place the baking dish in the preheated oven and bake for about 10 minutes or until the cheese is melted and bubbly. Stir occasionally to ensure even melting.
  4. While the cheese and Rotel are in the oven, cook the ground sausage in a skillet over medium heat. Break it apart with a spatula and cook until it is browned and fully cooked. Drain any excess grease.
  5. Once the cheese is fully melted and bubbly, remove the baking dish from the oven.
  6. Add the cooked ground sausage to the melted cheese and Rotel mixture in the baking dish. Stir well to combine, ensuring that the sausage is evenly distributed.
  7. Serve the dip hot with tortilla chips or crackers for dipping.
