Creamy Chicken Stuffing Bake

Ingredients:

  • 2 cans of cream of chicken soup
  • 2 boxes of stuffing mix, any flavor (such as herb, cornbread, or traditional)
  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • Optional: additional seasoning (like poultry seasoning or garlic powder) for extra flavor

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a casserole dish lightly to prevent sticking.
  2. Prepare Stuffing: Cook the stuffing according to the instructions on the box. This typically involves boiling water and adding it to the stuffing mix, then fluffing with a fork. Once cooked, set aside.
  3. Prepare Chicken: Season the chicken breasts with salt, pepper, and any additional seasoning of your choice. Heat a skillet over medium-high heat and add a bit of oil. Brown the chicken breasts on both sides until they are cooked through, about 5-7 minutes per side depending on thickness. Once cooked, remove from heat and let them rest for a few minutes. Then, chop or shred the chicken into bite-sized pieces.
  4. Combine Ingredients: In a large mixing bowl, combine the cream of chicken soup, cooked stuffing, and chopped/shredded chicken. Stir well to ensure everything is evenly coated and mixed.
  5. Bake: Transfer the mixture into the greased casserole dish, spreading it out evenly. Place the dish in the preheated oven and bake for 20-30 minutes, or until the casserole is heated through and the top is golden brown and crispy.
  6. Serve: Once baked, remove the casserole from the oven and let it cool slightly before serving. Garnish with fresh herbs like parsley or chives if desired. Serve hot and enjoy your creamy chicken stuffing bake!

Note: Feel free to customize this recipe by adding vegetables like peas, carrots, or celery for extra flavor and nutrition. You can also top the casserole with shredded cheese during the last few minutes of baking for a cheesy twist.
