One of the easiest crockpot meals to make!
Dump and go!
A few chicken breasts
Mini Red Potatoes
Baby Carrots
Large can or 2 of cream of chicken soup (if you like it more or less creamy)
1-2 packets of ranch seasoning
Seasonings of your choice (I just use a little season salt as it already has alot of flavor!)
A stick of butter
Throw it all in, set your crockpot on High. Its done when the chicken falls apart and veggies are soft!
Creamy Ranch Chicken and Vegetables Crockpot Delight
Ingredients:
- 3-4 boneless, skinless chicken breasts
- 1.5 lbs mini red potatoes, halved or quartered
- 1 lb baby carrots
- 1 large can (or 2 regular-sized cans) of cream of chicken soup
- 1-2 packets of ranch seasoning
- 1 teaspoon season salt (adjust to taste)
- 1 stick (1/2 cup) of butter, sliced
- Additional seasonings of your choice (optional)
Instructions:
- Preparation:
- Rinse and pat dry the chicken breasts.
- Cut the mini red potatoes into halves or quarters, depending on their size.
- If the baby carrots are large, you can cut them into smaller pieces for even cooking.
- Assembly:
- In the crockpot, place the chicken breasts at the bottom.
- Add the halved or quartered red potatoes and baby carrots around the chicken.
- Pour the cream of chicken soup over the chicken and vegetables.
- Sprinkle the ranch seasoning evenly over the contents of the crockpot.
- Season with season salt and any additional seasonings of your choice.
- Butter It Up:
- Place the slices of butter evenly over the top of the ingredients. The butter will add richness to the dish.
- Cooking:
- Set your crockpot to High heat.
- Cover and let it cook for approximately 4-5 hours or until the chicken easily falls apart, and the vegetables are tender. Cooking times may vary depending on your crockpot, so check for doneness periodically.
- Serve:
- Once cooked, gently shred the chicken using two forks and mix everything well to incorporate the creamy sauce.
- Taste and adjust seasoning if needed.
- Garnish and Enjoy:
- Optionally, garnish with fresh herbs like parsley or chives for a burst of color and freshness.
- Serve the creamy ranch chicken and vegetables hot over rice, pasta, or on its own.
