Dorito Chicken Casserole


  • 2-3 chicken breasts, boiled and shredded
  • 1 family size bag of Doritos
  • 1 large can Cream of Chicken soup
  • 1 small can Cream of Chicken soup
  • 1 small can Cream of Mushroom soup
  • 1 can Rotel
  • 2 cups Fiesta shredded cheese
  • 1/2 onion, chopped
  • Butter for sautéing


  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Chicken:
    • Boil the chicken breasts until fully cooked.
    • Shred the chicken and set it aside.
  3. Prepare Soup Mixture:
    • In a pot, combine the large can of Cream of Chicken soup, small can of Cream of Chicken soup, small can of Cream of Mushroom soup, and the can of Rotel.
    • Warm the mixture over medium heat, stirring to combine well.
  4. Sautéed Onions:
    • In a separate pan, sauté the chopped onions in butter until they are soft and translucent.
  5. Combine Onions with Soup Mixture:
    • Mix the sautéed onions into the pot with the soup and Rotel mixture. Stir well to combine.

    • In a baking pan, start layering the ingredients. Begin with a layer of the soup mixture.
    • Follow with a layer of Doritos, a layer of shredded chicken, and a layer of shredded cheese.
    • Repeat the layers until you run out, ensuring the top layer is a generous sprinkle of cheese.
  7. Bake:
    • Cover the baking pan with aluminum foil.
    • Bake in the preheated oven for about 25 minutes or until the casserole is hot and bubbly.
  8. Serve:
    • Remove from the oven, uncover, and let it cool slightly before serving.
