Has anyone used packs of flavored instant oatmeal in their cookies instead of regular rolled oats? I was making cowboy cookies and didnโ€™t have rolled oats, so I used 3 packs of maple and brown sugar instant oatmeal instead. They turned out really good!! I couldnโ€™t find one recipe that had all the things I like in cowboy cookies, so I took inspiration from multiple recipes and made this one my own.
– 1 cup salted butter, room temperature
– 1 cup packed light brown sugar
– 3/4 cup granulated sugar
– 2 eggs, room temperature
– 2 teaspoons vanilla
– 2 cups all purpose flour
– 1 teaspoon baking soda
– 1 teaspoon cinnamon
– 3 packs maple & brown sugar instant oatmeal
– 3/4 cup semisweet chocolate chunks
– 3/4 cup milk chocolate chips
– 1 cup chopped walnuts, toasted
– 1 cup sweetened, shredded coconut
1) mix butter and sugars until light and fluffy
2) add in eggs and vanilla and mix
3) combine flour, baking soda, cinnamon, and 3 packs of oatmeal
3) add in flour mixture to butter mixture a cup at a time and mix until just blended
4) stir in chocolate chunks and chips, walnuts, and coconut
5) used a large 3 tablespoon cookie scoop and scooped onto a parchment lined, dark cookie sheet
6) chilled cookies on sheet for one hour in refrigerator
7) pressed cookies down slightly with a fork
8 ) baked at 350 degrees for 12 minutes, one cookie sheet at a time
9) let cookies rest on sheets for 10 minutes before removing
The recipe made 2 dozen large cookies for me.
This was my first attempt at ever making my own cookie recipe, so I was thankful it worked out!
Edited to add – some recipes I saw called for 2 full cups of sugar. Some were 2 cups of brown, some were 2 cups of white, and some were 1 of each. Because of the sugar in the oatmeal, I reduced the white sugar down to 3/4 of a cup. 8 people have tried the cookies so far, and no one has thought they were too sweet. But Iโ€™m sure you could reduce the sugar even more or use low sugar oatmeal mixes.
Also, the cookies were a little crunchy on the outside and soft and chewy in the middle. The best combination to me!
