Fiesta Casserole Delight
Ingredients:
- 3 ½ cups cooked egg noodles
- 1 lb ground beef
- 15 oz can of corn, drained
- 1 cup salsa
- ÂĽ cup sliced black olives
- ÂĽ cup taco sauce
- 15 oz can kidney beans, rinsed and drained well
- 1 packet taco seasoning
- ½ cup tomato sauce
- Shredded cheddar cheese (optional)
- Green onions for garnish
Instructions:
- Preheat the oven to 350 degrees.
- In a skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.
- Add taco seasoning, taco sauce, salsa, olives, corn, beans, and tomato sauce to the skillet with the meat. Stir to combine.
- Toss the meat mixture with the cooked noodles until well combined.
- Layer the mixture into a well-greased 9×13 baking dish. Top with shredded cheddar cheese if desired.
- Bake for 30 minutes or until the casserole is bubbly and the cheese is melted.
