2 pounds of diced and blanched potatoes (prepared from the 16 pounds bought on sale)
1 cup diced bell peppers (any color)
1 cup diced onions
1 cup diced zucchini
1 cup diced tomatoes
1 cup corn kernels (fresh or frozen)
1 cup cooked and crumbled bacon (optional for added flavor)
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon paprika
Fresh herbs (such as parsley or chives) for garnish
Instructions:

Prepare the Potatoes:

Dice and blanch the potatoes as mentioned in your initial description. Ensure they are properly drained and cooled.
Prepare the Vegetables:

Dice the bell peppers, onions, zucchini, and tomatoes into uniform pieces.
Cooking:

In a large skillet, heat olive oil over medium heat.
Add diced onions and cook until they become translucent.
Add Potatoes:

Add the blanched potatoes to the skillet. Cook for 5-7 minutes or until they start to develop a golden crust.
Add Vegetables:

Add bell peppers, zucchini, tomatoes, and corn to the skillet. Stir well to combine.
Seasoning:

Season the mixture with salt, pepper, garlic powder, and paprika. Adjust the seasonings according to your taste.
Optional: Add Bacon:

If using bacon, add the cooked and crumbled bacon to the skillet. Mix well.
Cook Until Crispy:

Continue cooking, stirring occasionally, until the vegetables are tender, and the potatoes are crispy on the edges.
Serve:

Once everything is cooked to your liking, remove the skillet from heat.
Garnish with fresh herbs, such as parsley or chives.
Storage:

Allow the skillet hash to cool completely before dividing it into meal-sized portions.
Place wax paper between layers if freezing to prevent sticking.
Enjoy:

To reheat, simply take out a portion, thaw if frozen, and heat in a skillet or microwave until warmed through.
This versatile Potato and Vegetable Skillet Hash can be enjoyed as is or served alongside eggs for a hearty breakfast, as a side dish for lunch, or as a satisfying dinner option. It’s a delicious and economical way to make the most out of your budget-friendly potato purchase!
