1 cup diced bell peppers (any color)
1 cup diced onions
1 cup diced zucchini
1 cup diced tomatoes
1 cup corn kernels (fresh or frozen)
1 cup cooked and crumbled bacon (optional for added flavor)
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon paprika
Fresh herbs (such as parsley or chives) for garnish

Prepare the Potatoes:

Dice and blanch the potatoes as mentioned in your initial description. Ensure they are properly drained and cooled.
Prepare the Vegetables:

Dice the bell peppers, onions, zucchini, and tomatoes into uniform pieces.
