Fiesta Casserole Delight


  • 3 ½ cups cooked egg noodles
  • 1 lb ground beef
  • 15 oz can of corn, drained
  • 1 cup salsa
  • ¼ cup sliced black olives
  • ¼ cup taco sauce
  • 15 oz can kidney beans, rinsed and drained well
  • 1 packet taco seasoning
  • ½ cup tomato sauce
  • Shredded cheddar cheese (optional)
  • Green onions for garnish


  1. Preheat the oven to 350 degrees.
  2. In a skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.
  3. Add taco seasoning, taco sauce, salsa, olives, corn, beans, and tomato sauce to the skillet with the meat. Stir to combine.
  4. Toss the meat mixture with the cooked noodles until well combined.
  5. Layer the mixture into a well-greased 9×13 baking dish. Top with shredded cheddar cheese if desired.
  6. Bake for 30 minutes or until the casserole is bubbly and the cheese is melted.
