Ingredients:

  • 12 ounces egg noodles, cooked according to package directions (whole wheat for extra fiber)
  • 4 cups shredded chicken
  • 2 cans cream of chicken soup
  • 16-ounce container sour cream-based French onion dip (Dean’s recommended)
  • 1 cup shredded cheddar cheese
  • French fried onions (for topping)
  • 2 medium onions, thinly sliced and caramelized
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Optional: Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add thinly sliced onions and cook, stirring occasionally, until caramelized and golden brown. This should take about 15-20 minutes. Season with salt and pepper to taste. Set aside.
  3. In a large mixing bowl, combine the cooked egg noodles, shredded chicken, cream of chicken soup, sour cream-based French onion dip, and shredded cheddar cheese. Mix until well combined.
  4. Fold in the caramelized onions, ensuring they are evenly distributed throughout the mixture.
  5. Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
  6. Top the casserole with French fried onions, adding a generous layer for added crunch and flavor.

  8. Remove from the oven and let it cool for a few minutes before serving.
