Strawberry shortcake crunch cupcakes, first time making theseÂ
For crunch topping
1 lg box of strawberry jello mix
1 lg box of vanilla pudding mix
1 stick of butter (room temp)
1/2 C flour
in 2 seperate bowls
put strawberry jello mix in 1 bowl with 1/4 C flour and 1/2 stick of butter
in the other bowl put the vanilla pudding mix with 1/4 C flour and 1/2 stick of butter
using a fork smash together the mix, flour & butter til all blended into a sand like texture
spread both bowls onto a cookie sheet mixed together and spread flat.
bake on 350 for 7 minutes
Let cool 30 mins at least and then crumble up til it’s small crumbs
I used vanilla cake mix and strawberry cake mix.
Made with an extra egg, milk instead of water and melted butter instead of oil x2
in each cupcake paper I put a scoop of each flavor batter and baked as directed.
Frosting is
1 C butter
4 C powdered sugar
1/3 C heavy cream
2 tsp vanilla extract
