Just throw a little flour and an egg in your leftover mashed potatoes and you have potato cakes as my Appalachian Mom and grandmas called them. I put cheese in mine. Update: I never said these had onion or didn’t. It’s okay if they do or don’t. It’s okay if you put the kitchen sink in them. We ate these with green onions and sour cream.
Sometimes people eat them with syrup and butter, you don’t want onions in those, and if you do that perfectly okay too…..Just because you make it one way doesn’t mean it’s the only way…that’s why I hate to share recipes, because there’s always somebody telling you you’re doing it wrong. Diversity is a good thing sometimes.
