Mom’s Potato Skin Chips
Ingredients:
- Potato peelings from 5 large potatoes, washed and dried
- Vegetable oil for frying
- Salt to taste
Instructions:
- Begin by washing the potato peelings thoroughly with a washcloth to remove any dirt or debris. Rinse them well under running water and pat them dry with a kitchen towel.
- Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 375°F (190°C).
- Carefully add the dried potato peelings to the hot oil in batches, making sure not to overcrowd the fryer. Fry them for about 2-3 minutes or until they turn golden brown and crispy.
- Once crispy and golden, remove the potato skin chips from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.
- While still hot, sprinkle the potato skin chips with salt to taste, ensuring they are evenly seasoned.
- Repeat the frying process with the remaining potato peelings until all are cooked into crispy chips.
- Serve the potato skin chips immediately as a snack or alongside your favorite dishes, such as potato soup or any other soup of your choice.
