Mom’s Potato Skin Chips


  • Potato peelings from 5 large potatoes, washed and dried
  • Vegetable oil for frying
  • Salt to taste


  1. Begin by washing the potato peelings thoroughly with a washcloth to remove any dirt or debris. Rinse them well under running water and pat them dry with a kitchen towel.
  2. Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 375ยฐF (190ยฐC).
  3. Carefully add the dried potato peelings to the hot oil in batches, making sure not to overcrowd the fryer. Fry them for about 2-3 minutes or until they turn golden brown and crispy.
  4. Once crispy and golden, remove the potato skin chips from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.
  5. While still hot, sprinkle the potato skin chips with salt to taste, ensuring they are evenly seasoned.
  6. Repeat the frying process with the remaining potato peelings until all are cooked into crispy chips.
  7. Serve the potato skin chips immediately as a snack or alongside your favorite dishes, such as potato soup or any other soup of your choice.

Note: Make sure to dispose of the oil properly once cooled, or strain and reuse it for future frying purposes.
