Quick meal for under $20
Fed 2 adults and a teen. I didn’t get a pic until after fixing plates so this made a lot.
The pasta was on sale 4 for $5.
I used 2 boxes,
The chicken was $12 + some change.
baked and hammered by my bf (he said his hands were tired )
Seasoned with salt, pepper, garlic and onion powder, chicken seasoning & Cajun seasoning. Baked for 20 min at 425 degrees.
Cajun Chicken Alfredo Pasta
Ingredients:
- 2 boxes of pasta (your choice, based on the sale – let’s say penne or fettuccine)
- 1.5 lbs boneless, skinless chicken breasts
- Salt, pepper, garlic powder, onion powder, chicken seasoning, and Cajun seasoning (to taste)
- Olive oil
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup unsalted butter
- Fresh parsley (for garnish)
Instructions:
- Preheat the oven:
- Preheat your oven to 425 degrees Fahrenheit.
- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, chicken seasoning, and Cajun seasoning.
- Place the seasoned chicken on a baking sheet, drizzle with olive oil, and bake for 20 minutes or until fully cooked.
- Cook the Pasta:
- While the chicken is baking, cook the pasta according to the package instructions. Drain and set aside.
- Prepare the Alfredo Sauce:
- In a large skillet, melt the butter over medium heat.
- Pour in the heavy cream and stir until well combined.
- Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy. Reduce heat to low.
- Shred the Chicken:
- Once the chicken is cooked, let it rest for a few minutes, and then use two forks or a meat mallet to shred the chicken into bite-sized pieces.
- Combine Everything:
- Add the shredded chicken to the Alfredo sauce in the skillet and mix well.
- Toss in the cooked pasta, ensuring it’s well coated with the sauce.
- Serve:
- Dish out the Cajun Chicken Alfredo Pasta onto plates.
