Quick and Easy Cowboy Caviar Skillet
1 lb ground beef, browned
1 1/2 cups shredded cheese (cheddar or Mexican blend)
1 can (10 oz) Rotel diced tomatoes and green chilies
1 can (15 oz) corn, drained
1 cup mayonnaise
1 cup sour cream
1 packet taco seasoning
Optional: Soft tortillas, corn chips, Doritos, or Tostitos Scoops for serving
Brown the Ground Beef:
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
Prepare the Cowboy Caviar Mixture:
In the skillet with the cooked ground beef, add the shredded cheese, Rotel diced tomatoes and green chilies, drained corn, mayonnaise, sour cream, and taco seasoning.
Mix and Heat:
Stir the ingredients together until well combined. Heat the mixture over medium heat until the cheese is melted, and the caviar is heated through. Be careful not to bring it to a boil; just warm it up.
Once the Cowboy Caviar is hot and melty, it’s ready to serve. Choose your preferred serving option: scoop the mixture onto soft tortillas, dip with corn chips, Doritos, or Tostitos Scoops.
Garnish (Optional):
Garnish with additional shredded cheese, chopped green onions, or fresh cilantro if desired.
