Cowboy hamburger soup
1 lb hamburger meat
1 can tomato paste
1 can of tomato soup
1 container of broth
2 can mixed veggies
2 can corn
1 can green beans
2 can sliced potatoes
Seasoned with salt, pepper, onion powder, garlic powder, and go-to seasoning (got at Walmart)
Cooked on high for 4 hours! served with corn bread mini muffins (jiffy mix)
Cowboy Hamburger Soup with Cornbread Mini Muffins
Ingredients:
- 1 lb ground beef
- 1 can (6 oz) tomato paste
- 1 can (10.75 oz) condensed tomato soup
- 1 container (32 oz) beef broth
- 2 cans (15 oz each) mixed vegetables, drained
- 2 cans (15 oz each) corn kernels, drained
- 1 can (15 oz) green beans, drained and chopped
- 2 cans (15 oz each) sliced potatoes, drained and diced
- Salt, to taste
- Black pepper, to taste
- Onion powder, to taste
- Garlic powder, to taste
- Go-to seasoning (available at Walmart), to taste
- Cornbread Mini Muffins (using Jiffy mix or your preferred cornbread mix)
Instructions:
- Brown the Ground Beef: In a large skillet, brown the ground beef over medium-high heat. Break it into crumbles as it cooks. Drain excess fat, if any.
- Prepare the Slow Cooker: Transfer the browned beef to a slow cooker. Add the tomato paste, condensed tomato soup, and beef broth to the slow cooker. Stir well to combine the ingredients.
- Add Vegetables: Add the drained mixed vegetables, corn kernels, chopped green beans, and diced sliced potatoes to the slow cooker.
- Season the Soup: Season the soup with salt, black pepper, onion powder, garlic powder, and your go-to seasoning. Stir to ensure the seasonings are evenly distributed.
- Cook on High: Cover the slow cooker and cook the soup on high for 4 hours. This allows the flavors to meld together and the vegetables to become tender.
- Prepare Cornbread Mini Muffins: While the soup is cooking, preheat your oven according to the instructions on the cornbread mix package. Prepare the cornbread batter as directed and pour it into a mini muffin tin. Bake the mini muffins according to the package instructions until they are golden brown and cooked through.
- Serve: After 4 hours, check the soup for seasoning and adjust if necessary. Ladle the hot Cowboy Hamburger Soup into bowls and serve with warm Cornbread Mini Muffins.
