CREAM CHEESE CHICKEN TACOS
INGREDIENTS :
1 package (8 ounces) of cream cheese
2 clove garlic, minced
2 cups deli rotisserie chicken or leftover roast/baked chicken shredded
1 bunch green onion, thinly sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
10 medium corn tortillas
canola oil for frying
INSTRUCTIONS :
-Prepare the oven and preheat to 425 degrees F.
-Place a skillet on the stove and turn the heat to medium.
-Add in oil and allow it to become hot.
-Add 1 tortilla at a time and fry it until the colour turns light brown. Repeat this to the rest of the tortillas.
-Place the fried tortillas in a plate lined with a paper towel to drain the excess oil.
-Place a saucepan on the stove and turn the heat to low.
-Add in the cream cheese and heat until melted.
-Add in the shredded chicken, green onion, garlic, and Cheddar cheese.
-Remove from the heat and stir until well mixed.
-Fill each fried tortilla with the chicken mixture.
-Put the tortillas in a 9×13-inch baking dish.
-Place it inside the preheated oven and bake for 8 to 10 minutes or until done.
-Remove from the oven and let it sit at room temperature to cool for at least 2 minutes.
-Serve and enjoy!
