Potato-Encased Meatloaf Delight

Ingredients:

  • 1.5 lbs ground beef (or your preferred meat substitute)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped bell peppers (any color)
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 large potatoes, peeled and thinly sliced

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onions, chopped bell peppers, minced garlic, eggs, ketchup, Worcestershire sauce, dried oregano, dried thyme, salt, and pepper. Mix well until all ingredients are evenly combined.
  3. Shape the meat mixture into a loaf shape and place it in the center of a greased baking dish.
  4. Surround the meatloaf with the thinly sliced potatoes, creating a layer around the entire meatloaf. This will help absorb any excess grease during baking.
  5. Bake in the preheated oven for approximately 1.5 hours or until the internal temperature of the meatloaf reaches 160°F (71°C). You can use a meat thermometer to check the temperature.
  6. Once the meatloaf is cooked through, remove the dish from the oven and let it rest for a few minutes before slicing.
