Hearty Hamburger Soup with Cornbread
Ingredients:
For the soup:
- 1 lb ground beef
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1 can (10 oz) Rotel diced tomatoes and green chilies
- 1 can (14.5 oz) chopped tomatoes
- 4 cups beef broth
- 1 can (15 oz) corn, drained
- 1 can (15 oz) green beans, drained
- Salt and pepper to taste
- Optional: additional seasonings like paprika, thyme, or Worcestershire sauce
For the cornbread:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
Instructions:
- Prepare the Soup:
- In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it up with a spoon as it cooks.
- Add minced garlic, chopped onions, and bell pepper to the pot. Cook until the vegetables are softened and the beef is fully browned.
- Stir in diced potatoes and sliced carrots.
- Pour in the Rotel diced tomatoes and chopped tomatoes along with their juices.
- Add beef broth to the pot, stirring well to combine.
- Bring the soup to a boil, then reduce the heat to low. Let it simmer for about 20-25 minutes or until the potatoes and carrots are tender.
- Stir in the drained corn and green beans. Season the soup with salt, pepper, and any additional seasonings to taste. Simmer for another 5 minutes.

- Preheat your oven to 400°F (200°C). Grease a 9×9 inch baking dish or line it with parchment paper.
- In a mixing bowl, combine the cornmeal, flour, baking powder, and salt.
- In another bowl, whisk together the milk, vegetable oil, and egg until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Pour the cornbread batter into the prepared baking dish and smooth the top.
- Bake in the preheated oven for 20-25 minutes or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
