Hearty Hamburger Soup with Cornbread

Ingredients:

For the soup:

  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • 1 can (10 oz) Rotel diced tomatoes and green chilies
  • 1 can (14.5 oz) chopped tomatoes
  • 4 cups beef broth
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) green beans, drained
  • Salt and pepper to taste
  • Optional: additional seasonings like paprika, thyme, or Worcestershire sauce

For the cornbread:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg

Instructions:

  1. Prepare the Soup:
    • In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it up with a spoon as it cooks.
    • Add minced garlic, chopped onions, and bell pepper to the pot. Cook until the vegetables are softened and the beef is fully browned.
    • Stir in diced potatoes and sliced carrots.
    • Pour in the Rotel diced tomatoes and chopped tomatoes along with their juices.
    • Add beef broth to the pot, stirring well to combine.
    • Bring the soup to a boil, then reduce the heat to low. Let it simmer for about 20-25 minutes or until the potatoes and carrots are tender.
    • Stir in the drained corn and green beans. Season the soup with salt, pepper, and any additional seasonings to taste. Simmer for another 5 minutes.
  2. Make the Cornbread:
    • Preheat your oven to 400°F (200°C). Grease a 9×9 inch baking dish or line it with parchment paper.
    • In a mixing bowl, combine the cornmeal, flour, baking powder, and salt.
    • In another bowl, whisk together the milk, vegetable oil, and egg until well combined.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
    • Pour the cornbread batter into the prepared baking dish and smooth the top.
    • Bake in the preheated oven for 20-25 minutes or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
    • Allow the cornbread to cool slightly before slicing and serving.
  3. Serve:
    • Ladle the hot hamburger soup into bowls and serve alongside slices of warm cornbread.
