Cheesy Smoked Sausage and Mini Potato Casserole

  • 1 smoked sausage, sliced
  • Half bag of frozen mini potatoes
  • 2 cups shredded cheese (cheddar or your favorite blend)
  • 1/2 onion, finely chopped
  • 1/2 cup milk
  • Seasoning of choice (such as garlic powder, paprika, salt, and pepper)
  • Cooking spray or a bit of butter for greasing the slow cooker

  1. Prepare the Slow Cooker:
    • Grease the slow cooker with cooking spray or a bit of butter to prevent sticking.
  2. Layer the Ingredients:
    • Place a layer of frozen mini potatoes at the bottom of the slow cooker.
    • Add a layer of sliced smoked sausage on top of the potatoes.
    • Sprinkle half of the chopped onions over the sausage.
    • Sprinkle one cup of shredded cheese over the onions.
    • Repeat the layers with the remaining potatoes, sausage, onions, and cheese.
  3. Seasoning:
    • Sprinkle your chosen seasonings over the layers. Be creative with your seasoning choices to suit your taste.
  4. Mix and Pour:
    • In a small bowl, mix the milk with any additional seasonings you’d like to incorporate. Pour this mixture evenly over the layers.
  5. Cooking:
    • Set the slow cooker to high and cook for approximately 4 hours. Keep an eye on it to ensure the potatoes are tender, and the cheese is melted and bubbly.
  6. Serve:
    • Once the casserole is cooked, serve it warm. You can garnish it with fresh herbs or additional cheese if desired.

Note: Feel free to customize this recipe based on your preferences. You can add vegetables like bell peppers or spinach for extra nutrients, or even toss in some cooked bacon for added flavor. This meal is not only kid-approved but also versatile, budget-friendly, and easy to throw together
