Easy Mushroom Pork Chop Casserole

Ingredients:

  • 4 boneless thin pork chops
  • 2 cups chicken broth
  • 1 box (6 oz) stovetop stuffing
  • 1 can (10 oz) cream of mushroom soup
  • Spices to taste (Adobo mix, garlic, salt, pepper)
  • Cooking spray or olive oil for greasing

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a small casserole dish with cooking spray or olive oil.
  2. Prepare Stuffing Mixture: In a small bowl, combine 2 cups of chicken broth with the contents of the stovetop stuffing box. Stir well and let it sit until the liquid is absorbed.
  3. Season Pork Chops: Lay the boneless thin pork chops in the greased casserole dish. Season the pork chops with your preferred spices, such as Adobo mix, garlic, salt, and pepper.
  4. Cover with Mushroom Soup: Pour the can of cream of mushroom soup over the seasoned pork chops, ensuring an even distribution.
  5. Add Stuffing Layer: Spread the prepared stuffing mixture evenly over the pork chops and mushroom soup layer.
  6. Cover and Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes. Check the internal temperature of the pork chops to ensure they are cooked through. If needed, bake for additional time, adjusting based on the thickness of your pork chops.
  7. Uncover and Brown: After 30 minutes, remove the aluminum foil and continue baking for an additional 10 minutes or until the top is golden brown. Keep an eye on the dish to prevent over-browning.
