Slow Cooker Queso Chicken Tacos

Single layer of chicken in crockpot, evenly distribute taco seasoning over chicken then mix rotel, green chilies and chicken broth, pour over chicken and cook for 4-6 hours.
When cooked, shred chicken and add the queso(cheese).
We put in tortillas to eat πŸ˜‹ currently in the crockpot to have for tonight.

Slow Cooker Queso Chicken Tacos


  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 can (10 ounces) diced tomatoes with green chilies (like Rotel)
  • 1 can (4 ounces) diced green chilies
  • 1 cup chicken broth
  • 2 cups shredded Mexican blend cheese or your favorite queso cheese
  • 8-10 small flour or corn tortillas
  • Optional toppings: diced tomatoes, shredded lettuce, diced onions, cilantro, sour cream, guacamole


  1. Prepare the Slow Cooker:
    • Place the chicken breasts in a single layer at the bottom of the slow cooker.
  2. Season the Chicken:
    • Evenly distribute the taco seasoning over the chicken breasts, ensuring they are well-coated.
  3. Add Tomatoes and Chilies:
