Delicious Breakfast Pocket Sandwich


  • 2-3 large eggs
  • 4 slices of your favorite bread
  • Butter
  • Cheese (cheddar, Swiss, or your choice)
  • Breakfast meat of your preference (bacon, sausage, ham)
  • Salt and pepper to taste
  • Optional toppings: sliced tomatoes, avocado, spinach, hot sauce


  1. Prepare the Egg Mixture:
    • Whisk 2-3 eggs in a bowl.
    • Heat a non-stick pan over medium heat.
  2. Prep the Bread:
    • Butter the outer side of each of the 4 slices of bread.
  3. Dip and Cook:
    • Lay two slices of bread, non-buttered side down, into the whisked eggs in the pan. Allow them to soak for a moment.
    • Once the egg has coated the bread, flip them over so the buttered side is facing down in the pan.
    • Allow the egg to cook for about a minute or until mostly set.
  4. Add Fillings:
    • On one slice of bread, now facing up, add your choice of cheese and breakfast meat. Feel free to add additional toppings like tomatoes, avocado, or spinach.
  5. Fold and Seal:
    • Carefully fold the sides of the egg-coated bread over the fillings to create a pocket.
    • Take the other slice of bread, now with the egg-coated side facing down, and flip it over onto the filled side. Press down gently.
  6. Grill and Finish:
    • Grill the sandwich on both sides until the egg is fully cooked and the bread is golden brown.
    • Ensure the cheese is melted and the fillings are heated through.
  7. Serve and Enjoy:
    • Remove the sandwich from the pan, let it cool for a moment, and then slice it in half.
    • Serve your delicious breakfast pocket sandwich with your favorite hot sauce or condiments.
