This Cheesy Hamburger Potato Casserole is a great weekday meal and a hit with the kids! You control the ingredients, so it’s just as easy to make as Hamburger Helper. Here’s what you’ll need:
Ingredients:
1 lb crumbled ground beef
1 diced yellow onion
3-4 lbs potatoes, peeled and sliced
8 oz or more shredded Cheddar Cheese
1 can Cheddar Cheese soup mix
12 oz evaporated milk or whole milk
1/2 cup milk
1 tsp salt
1/2 tsp pepper
Instructions:
Preheat oven to 350°F and spray a 9×13 baking dish with nonstick cooking spray.
In a large skillet, cook ground beef and onion until the meat is done.
Layer potatoes in the bottom of the baking dish, sprinkle with salt and pepper.
Spread approximately 1/3 of the meat mixture evenly over the potatoes, then sprinkle with 1/3 of the shredded cheese. Repeat this process twice more.
The last layer should be the remaining cheese.
In a bowl, combine Cheddar cheese soup mix, milk, and evaporated milk. Pour the mixture over the top of the potatoes and beef.
Cover the baking pan with aluminum foil and bake for one hour. Remove the foil and bake for an additional 15 minutes to get a golden topping on the cheese.
