Cheesy Ritz Cracker Chicken Casserole with Cavatappi Pasta
Ingredients:
- 3 cans (10.75 oz each) cream of chicken soup
- 1 container (16 oz) sour cream
- 1 bunch scallions, chopped
- 4 cups shredded cooked chicken (rotisserie chicken works great)
- 2 to 3 sleeves of Ritz Crackers, crushed
- 12 oz Cavatappi pasta, cooked and drained
- 2 to 3 cups shredded cheese (cheddar or a blend of your choice)
- 3/4 stick of butter, melted
- Black pepper, to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- Cook the Cavatappi pasta according to package instructions. Drain and set aside.
- In a large mixing bowl, combine the cream of chicken soup, sour cream, chopped scallions, shredded chicken, shredded cheese, and black pepper. Mix until well combined.
- Place the cooked and drained Cavatappi pasta in the bottom of a 9×13 casserole dish and a mini 9×6 dish.
- Spread the soup and chicken mixture evenly over the pasta in both dishes.
- Sprinkle the crushed Ritz Crackers over the top of the casserole.
- Drizzle the melted butter evenly over the crushed crackers.
- Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
