I pre cook and freeze breakfast A LOT. My 17 year old son and husband are die hards for breakfast. So, I either use English muffins or hawiaan rolls. I make 6 ham, swiss,and egg,6 sausage, cheddar, and egg. I also make sausage,egg,potato,and cheese burritos. Just cook,pack, and freeze. They last a while – although not here lol. Just a thought for ones who LOVE breakfast,but tired of making it every day.

Take out the night beforehand, thaw in fridge. Cook (wrapped in damp.papertowel) for 1.5 mind,or until there’s no cold spots. Or cook frozen!
I either wrap them in saran wrap and foil or vacuum seal.

Make-Ahead Breakfast Sandwiches: English Muffin Delight

Ingredients:

  • 6 English muffins, split
  • 6 slices of ham
  • 6 slices of Swiss cheese
  • 6 eggs
  • 6 sausage patties
  • 6 slices of cheddar cheese
  • 12 slices of bacon
  • Salt and pepper, to taste
  • Butter, for toasting

Optional Burrito Filling:

  • 6 large flour tortillas
  • 2 cups diced potatoes, cooked
  • 1 cup shredded cheese (cheddar or your choice)

Instructions:

  1. Prepare the English Muffins:
    • Toast the English muffins and lightly butter them. Let them cool.
  2. Ham, Swiss, and Egg Sandwich:
    • Cook 6 eggs as dippy (sunny side up) or your preferred style.
    • On the bottom half of each English muffin, place a slice of ham, followed by a slice of Swiss cheese, and then the cooked egg.
    • Top with the other half of the English muffin.
  3. Sausage, Cheddar, and Egg Sandwich:
    • Cook 6 sausage patties.
    • On the bottom half of each English muffin, place a sausage patty, a slice of cheddar cheese, and a cooked egg.
    • Top with the other half of the English muffin.
  4. Bacon, Egg, and Cheddar Sandwich:
    • Cook 12 slices of bacon until crispy.
    • On the bottom half of each English muffin, place a slice of bacon, a slice of cheddar cheese, and a cooked egg.
    • Top with the other half of the English muffin.
  5. Optional Sausage, Egg, Potato, and Cheese Burritos:
    • If you prefer burritos, combine cooked and diced potatoes, cooked sausage, and shredded cheese on a large flour tortilla. Add a cooked egg and roll it into a burrito.
  6. Wrapping and Freezing:
    • Wrap each sandwich individually in plastic wrap and foil or vacuum seal them for longer storage.
    • Label with the type of sandwich and freezing date.
  7. Cooking from Frozen:
    • To reheat, either thaw in the refrigerator overnight or cook directly from frozen.
    • Unwrap the sandwich, place it on a microwave-safe plate, and cover it with a damp paper towel.
    • Microwave for 1.5 minutes or until there are no cold spots.
  8. Enjoy:
    • Serve these delicious breakfast sandwiches with a side of fresh fruit or a hot cup of coffee.
